Nestlé: Gluten Free Borlotti Bean & Cornflake Chili Bake and Cornflake Chevda


I love these delicious Nestlé Gluten Free Corn Flakes, and Honey Flakes, Not only do they taste amazing but these tasty crispy flakes of golden corn are a great source of seven vitamins and minerals, including iron and vitamin D. I normally only eat Nestlé Gluten Free Corn Flakes for breakfast, So I was delighted to learn that Nestlé cereals has partnered with TV chef Phil Vickery to create some delicious new recipes using Nestlé Gluten Free Cornflakes.Here is just one of those recipes Phil’s Brilliant Borlotti Bean & Cornflake Chili Bake a simple and delicious gluten free version of a classic Italian pasta bake, perfect for feeding the whole family.


Phil’s Brilliant Borlotti Bean & Cornflake Chilli Bake

Serves: 4-6
Preparation time: 25 minutes
Cooking time: 20 minutes

Ingredients:
 200g gluten free pasta or gnocchi
2 tbsp olive oil
425g can borlotti beans (well drained)
Finely grated zest of 1 large lemon
40g pinenuts
4 tbsp roughly chopped parsley
Pinch or two of dried chilli flakes
70g gluten free corn flakes
350ml single cream
10g gluten free vegetable stock cube
Salt and pepper to season
250g mozzarella cheese in slices (optional)

Method:
Pre-heat the oven to 220°C, gas 7. Cook the pasta or gnocchi and drain well, be sure to toss in a little olive oil to stop it sticking together.
Place the beans, zest, nuts, parsley, chilli and cornflakes into a bowl and mix well.
Next combine the cream and stock cubes in a saucepan and bring to the boil, whisk well to dissolve the stock cube, before pouring over the bean mixture. Mix together well.
Season with salt and pepper to taste and spoon into a 28cm x 4cm deep baking dish.
Top with sliced mozzarella (optional) and pop into the pre-heated oven. Cook for 20 -25 minutes, or until well browned.
Remove from the oven and cool for 5 minutes before eating, be mindful the dish will be very hot when you take it out the oven.

After viewing these amazing recipes, I was really excited to take on the challenge to see what I could create. and after a lot of deliberating  I decided to create my all time favourite Cornflakes Chevda

Cornflake Chevda


Serves; 2
Preparation time; 5 minutes
Cooking time; less then 10 minutes

Ingredients:
1 Cup of Nestle Gluten Free Cornflakes
1 to 2 tbsp Olive oil
2 tbsp Cashews
2 tbsp  Almonds
2 tbsp Raisins
4 tbsp of pre roasted cup chana dal
1/2 tsp Turmeric powder
1/4 tsp of Chili powder
Few pinches of dried coriander 
Salt and pepper to taste

Method:
Step 1 - Add the oil to a frying pan,fry chili powder and turmeric powder heat for a few minutes
Step 2 -  Add the Nestle Gluten Free Corn flakes, followed by the cashews and almonds and chana dal, Add salt and pepper to taste, closely followed by the dried coriander. Mix thoroughly until cornflakes are coated and heated through.
Step 3 - Allow the mix to cool and then add the sweet raisins which will add a contrasting sweet taste to the spicy mix.
Step 4 - Store in air tight container
