Tesco Festive Food Swap - Sałatka Jarzynowa


I love trying new recipes, So I was extremely delighted to take part in Tesco's Festive Food Swap, It's a great chance to try a signature festive dish from another country. It's a real insight to see what other families from around the world will be tucking into on Christmas Day. I was excited to try Sałatka Jarzynowa, For many Polish people this traditionally cooked vegetable salad reminds them of their childhood, It has been part of Polish tradition since time began, and most cannot imagine Christmas holidays without it.

Ingredients
5 Large potatoes
3 Large carrots
1 Parsnip
1 Apple
5 Boiled eggs
1 Small tin of green peas
1 Large tin of sweetcorn
1 Jar of gherkins
Mayonnaise - Amount varies to taste
1 small onion (optional)
Salt, pepper and sugar to taste

Method
Wash the carrots, parsnip and potatoes and cook them in their skins in a large of salted water, Make sure you don't overcook the potatoes as you want them firm.
Drain and let everything cool before peeling the vegetables. Dice into your desired size. Then peel the apple and dice and add it to the vegetable mix, Drain the canned sweetcorn and peas and add to the vegetables. Now dice the gherkins. In a large bowl gently mix all of the ingredients together, add the mayonnaise, salt, sugar and pepper to taste mix again until Incorporated,
