Crazy Carrot Cupcakes


Crazy Carrot Cupcake's









These cupcakes are a family favorite and were one of our bestsellers-During mine and my sisters days of being Cupcake sellers in a market in London....

Ingredients

Cupcakes
175g Brown Sugar
200g Self Raising Flour
1tsp Bicarbonate of Soda
2tsp Mixed Spice
Zest and Juice of one Orange
2 Eggs
150ml of oil
200g Carrots grated (approx 5 Carrots)


Frosting
100g Butter
300g Cream Cheese
100g Icing Sugar
1 tsp Vanilla Extract
few drops of orange food colouring optional

Method
sift flour and add all dry ingredients into bowl,flour,sugar,bicarb,mixed spices, carrots,orange zest and juice
make a well and slowly add eggs,oil and incorporated slowly.

You will end us with a beautiful smelling mixture, then using a tablespoon fill cupcake case a third of the cupcake case.
bake for 10-15 minutes gas mark 5 or  190 Celsius, gently insert a metal skewer and they will be ready when the skewer come out clean with no wet mix.

Once cooled add your frosting, you can either rustically spread it on a pipe it on using a piping bag.
