Princes Great British Bake off - Deserts Made Easy


Like most I have been really enjoying the Great British Bake Off, watching all that baking has really inspired me to get baking and creating myself. For more amazing inspirational recipes with a vast variety of fruit options I decided to choose my favourite Strawberry Fruit Filling and test out my Strawberry no cook Cheesecake.


Princes Strawberry no cook Cheesecake



Ingredients

Strawberry purée 
1/2 tin Princes Strawberry fruit fillings
50g icing sugar
Strawberries to decorate

Cheesecake
17 Digestives biscuits
100g butter 
500g soft cream cheese
200g icing sugar
1 pot double cream
Teaspoon vanilla essence


Method
Crush Digestive biscuits in a large clean food bag until you have very fine crumbs
next Melt the butter and mix in digestive biscuits crumbs, then in a lined/greased cake tin preferably one with an opening or removable bottom, push digestive mixture firmly all around and allow to cool and harden in the fridge for approx 1 hour.

  

After 1 hour mix together the  cream cheese and icing sugar with a palette knife, then add the fresh cream, vanilla essence and  whisk an electric whisk until mixture firms.


Then add cheesecake mixture on top of the digestive base, smooth cheesecake and put in fridge preferably overnight. Once mixture is has firmed gently release cheesecake from tin.


In a blender blend up at least half of the tin of the Princes Strawberry Fruit Filling 50g of icing sugar, then using a piping bag drizzle the mixture on the cheesecake.
Using them remainder of the Strawberries decorate the cheesecake and there you have it a deliciously creamy cheesecake.
