Here is a quick and very simple Spinach & Chili Omelette which can be accompanied with Saute Potatoes or some Thick Brown Bread...Delicious.
Ingredients
3 Medium/Large Eggs
Handful of baby spinach
1 green Chili
1/4 of a onion
Salt to taste
Method
Cut onion,chili and spinach into fine pieces...Beat together with the eggs, add a pinch of salt and cook slowly...Turning once....in a small to medium sized frying pan until golden...simple a nutritious tasty meal in minutes.

That looks delicious. I keep meaning to make omelettes for the kids but it's not one of my "regular" recipes. You've inspired me!
