Chicken and Spinach Curry

Chicken and Spinach Curry


Whole spices
1/4 Teaspoon of Cumin Seeds

Ground Spices
1 Teaspoon Ginger
1 Teaspoon Coriander
1 Teaspoon of Fennel
1/4 Teaspoon Cumin
1 Teaspoon of Chili
1/2 Teaspoon Garam Masala

500g Spinach
3 Tablespoons of Oil
500g Chicken Cubes
3 Tablespoons of Tomato Purée
1 Teaspoon Arrowroot (optional)*

Wash spinach and drain until water is gone

Heat 1 tablespoon of the oil in a saucepan over a medium heat add spinach leaves with 1/2 teaspoon if salt and cook for 3-4 minutes breaking down with the back of the wooden spoon into a pulp. Leave to one side

Hear remaining oil in saucepan over a medium heat ass whole spices until they sizzle.... Then add chicken and salt

Cover and cook for 5-8 minutes

Add ground spices stir the add tomato purée fry for few minutes before adding 300 ml of water
 (* I thickened water with 1 teaspoon of arrowroot)

Cover and cook for 30 minutes add spinach and continue to cook for 40-50 minutes on a low simmering heat.
